Samsun's Sweet Face: Filiz Helva ve Reçel



Hello,
My name is Sıla Vural. I’m a 10 year- old primary school student.
We have a Comenius Project about “Global Entrepreneurship”  as Kutlukent 80. Yıl İO.
We would like to know your firm.And we would like to interview of you.
Could you introduce yourself and your firm please.



Of course, this  would be a honour  for us.My name is Fatma .
I’m working as a quality assurance manager in this company. First, I would like to talk about our firm’s history.
Filiz, which commenced business life in the late 1800s in Russia, and whose business life is carried on with the production of sugar candies and Turkish delight with brands named “Arı” and “Zambak”, reached its recent constitution and structure in 1960s by extending its product range with sesame oil, halvah and jam. Filiz has been continuing production with the same brand name, with the same quality and with the same idea for approximately half century and serving traditional national tastes on our dinner tables by means of the factory in European Standards where approximately 100 staffs are employed with the covered area of 6.500 m2, and total area of 10.500 m2, which was a small factory in previous years. Filiz produces daily 16 tons of halvah, 5 tons of jam, 8 tons of sesame oil, 5 tons of sesame for simits (savory roll with sesame), 2 tons of Turkish delight and 4 tons of hazelnut cream with cocoa, and their 95 % are delivered to inland market and 5 % to foreign market. Main countries to which Filiz makes exportation are Germany, France, Russia and Bosnia Herzegovina. Filiz, whose background dates back to the establishment of the Republic,

Filiz has never lost its excitement on  the first day and continued its production, and it became one of the most important companies in this sector in both domestic and foreign markets by means of quality of its products, professional management approach, professional staff and powerful delivery network. Filiz gathers nutritious tastes of the tables together, and adds zest to each meal with its taste and quality, and will always continue to proceed towards better and nicer futures together with your power and confidence.

In order to provide our customers with the products in accordance with legislation and food safety, our essential policy is to develop our products, production process and business continually. 
For this reason, our objectives are the followings;

We know that sweet is so important for Turkish people. And we heard that you have some special recipes used your products.
Yes we have and we publish them on our web site too. Here is one of them.
Strawberry Jam Rolls
Ingredients
3 eggs
1 glasses of caster sugar
2 coffee cup of flour
6 tablespoons of cherry or strawberry jam

* Heat the oven up to 220°. Break the eggs into a heat resistant glass bowl.  Put another bowl filled with water onto the fire such that this bowl can be placed into it. When water boiling with small fire, put the glass bowl onto it (such that the steam of it can get out) mix the eggs until they bubbled. Add castor sugar and mix until it will be denser and color will change into like white cream color. Get out the bowl from the steam and add the flour and mix with wooden spoon. 
* Cover the bottom and edges of rectangular shaped structure with 20X30 cm dimensions with grease proof paper. Empty dough in it and spread over. Cook into the oven until their color became pink. Spread a kitchen cloth over the kitchen stand and spread a large grease proof paper over it. When sponge cake cooled, turn over the structure and empty it over grease proof paper. Pick up the cooking paper onto the sponge cake slowly. Wrap up the sponge cake making a roll together with the grease proof paper under it. 
* Cover the surface of the sponge cake with jam. And wrap up towards the same direction with previous/former making a roll and wrap them with the same paper and then wait for 1-2 hours. Remove the paper and spread castor sugar over it. Serve in slices.

Cultural Values


Some students who are at 4th grade in Kutlukent 80. Yıl Primary School have organised an exhibition about "Cultural Values"by guide theirs teacher Mehtap Bozoğlu.













They've realized this by bringing stuff from their own house.
The students demonstrated how they have been entrepreneurs as organising exhibition like this.

A Departure Story from the Port

Samsun is a city that has a large private port :"Samsun Port"


Every day, dozens of ships enter to the port and depart from it.






There are many silos and warehouses for keeping the stuff that will be carried by cargo boats.


And many cranes and winches work without cease during days and nights.



Some cargo boats wait for their order of loading or unloading.



When a cargo boat load,  two captains of the dock  direct the boat. And also sometimes the guides make guidance by pushing and pulling the ships.










And when one of the boat leaves the port. the other one takes its place.

















Port gives a lot of opportunities of employment to Samsun .
